3-Ingredient Watermelon 'Pops'

'Tis the season for beating the heat with ice-cold desserts on a stick. They're perfect for every summer occasion-- whether you're taking them on the go while catching some rays, or if you somehow ended up as the designated dessert-bringer for your neighborhood BBQ. However, we forget how aggressive this heat can be, turning our adorable treats into a sticky, drippy, not to mention, sugary, mess within seconds. The clean up is a hassle and can altogether ruin the enjoyment of our desserts. So, I've embraced my innermost lazy girl/genius using an unlikely set of 3 ingredients, that work together to form a 30 minute,  refined sugar-free, hassle-free dessert that you won't have to speed eat to enjoy... and you don't even need a freezer!

Watermelon 'Pops' With Coconut Butter Shell + Lime:

  • 1 small watermelon, cut into triangle wedges
  • 1 jar of pure coconut butter (or manna), such as Artisana or Nutiva's Organics 
  • Zest of 2 limes

method to the madness: Bring your coconut butter is at room temperature (it should be smooth and spreadable. if your coconut butter has hardened in the jar, heat it in the microwave for 15 seconds and give it a good stir). pour your coconut butter into a deep, wide-mouthed glass or jar. assemble your watermelon slices (rind on) onto bamboo skewers, and then dip them halfway into the coconut butter, being sure to coat the watermelon well. Lay each skewer onto a cookie sheet lined with wax paper. repeat until you have used all of your watermelon. place cookie sheet in the refrigerator for 10 minutes to allow the first layer of the coconut shell to harden. remove tray from fridge, and repeat the dipping process a second time to thicken the shell coating. reassemble your skewers onto the cookie sheet, sprinkle with lime zest, and return to the fridge until you are ready to serve! Enjoy!
