Let's face it. As much as we would all love to blink our eyes open groggily to the bright beams of sunlight filtering in through our bedroom windows, lounge lazily, wrapped in our sheets until the gurgle of our stomachs rouse us from bed, and pad to the kitchen to cook up a slow breakfast as we dance to our favorite morning playlist...

Real life mornings are rushed. Chaotic. Messy. Frantically brushing our teeth with one eye open, shoving our legs into a pair of jeans that hopefully matches our top, trying to make it out the door with keys, cell phone, and whatever other necessities your day may require all in one fail swoop...breakfast schmekfast. Sound familiar?

As busy, motivated women with seemingly endless responsibilities, we're really great at taking care of everyone and everything except ourselves. Let us not forget that the basis of happiness, productivity, and a clear, grounded sense of focus and calm throughout the day actually lays in how we fuel ourselves. No...not coffee. Food. Food!!!!

Fortunately, there is a solution to this dilemma that a) doesn't require you to wake up an hour early b) provides a complete profile of nutrients to get your day off to a rock-star beginning and c) tastes absolutely divine. It's called: overnight oats. With the shelves and displays of grocery stores and farmers' markets absolutely overflowing with juicy, ripe peaches just beckoning to be tossed with creamy coconut milk (full of healthy fats for brain fuel), oats (for sustainable energy and satiety until lunch time), maple syrup, pecans, and rosemary (for a savory-sweet trifecta that presents itself as a nostalgic hug to your tastebuds), the time is perfect for you to whip up this recipe before bed and pop it in the refrigerator and wake up to a stress-free, delectable breakfast, ready-made to fuel even the busiest of women on the go.  Rustic Peach Overnight Oats

(Serves 1)

  • 1/2 c gluten-free rolled oats
  • 1/2 c full-fat coconut milk  (unsweetened) or coconut yogurt
  • 1/4 c almond or other non-dairy milk
  • 1 ripe peach, core removed, sliced
  • 1/4 c pecans, roughly chopped
  • 1 tsp cinnamon
  • 1-2 tsp pure maple syrup
  • 1/2 tsp fresh rosemary

Method to the madness: The night before you plan to eat this tasty treat, combine all ingredients in a mason jar with a lid. Mix to combine thoroughly. Seal it up, pop it in the fridge. That's it!

Tasty tips: In the morning, all you have to do is grab and go! Feel free to add some fresh blueberries, and extra pecans for texture on top of your oats before you hit the road if you'd like. Enjoy!
