Overnight Oats 2 Ways + Cognitions of a 20 (!!!) Year Old

The past few days have been absolutely insane. This year I decided I wanted to begin my third decade of life in the mountains, completely disconnected from this crazy but wonderful life I lead. A few days before my birthday, my friend and I packed up my car and hit the road for the adventure of a lifetime, dog in tow. The trip couldn't have been more perfect. Mornings were slow and easy, spent lounging on our yoga mats with gourmet overnight oats I had made at home and brought along + sipping iced coffee, meditating, pondering life, and just plain soaking in the view. We spent the meat of our days hiking when the heat allowed, hiding in our hammock when the heat didn't, and snacking. Evenings involved cooking up stews and chili in the cast iron, walks in the rain, and staying up late playing cards and star-gazing. It was magical.

A lot of self-realization and big ideas occurred during my time at Big Bend. As humans, we are constantly evolving and growing, it doesn't matter what age you are. Being away from everything, having no responsibilities, and creating time for me to be still with my thoughts for once made a lot of things clear for me, in terms of how I want to manifest who and what I become in the coming years, and the impact I want to have on the lives of others. The thoughts and worries I want to free myself from. Relationships I want to mend. Bad habits I want to overcome. I left Big Bend with a renewed sense of self and motivation. It sounds cliche, but I really had a coming of age out there. I felt I was exactly where I was supposed to be, both right there in that moment and in this phase of life I am currently in. I feel like the top of my head was unscrewed and all thoughts that no longer serve me or make my life feel cluttered were removed. I feel like I have been given a fresh start, and I am so excited to see how Soul + Spoon develops as its own personality and hopefully a resource for others!

On with the sappiness. To the food! It was nice to have some fancy oats to wake up to each morning while we were roughin' it. Having something already prepared, light but filling, and full of nutrients to keep us full and fueled throughout the day truly elevated our camping experience! However, these overnights oats are for everyone, not just those with wanderlust. A cinch to prepare 5 minutes before bed, make a big batch to last you and your family throughout the week! 

Overnight Oats (Blackberry-Acai, Coconut, and Lime + Strawberry-Rose, Maple, and Mint)

(Each recipe serves 2)

Blackberry + coconut + a killer view

Blackberry-Acai, Coconut and Lime:

  • 1 c gluten-free rolled oats
  • 1 c full-fat coconut milk
  • 3 Tbsp honey
  • Juice of 1/2 lime
  • 1/2 c blackberry-acai puree (blend 1 Tbsp water with 1/2 c blackberries and 2 tsp acai powder)
  • 2 Tbsp chia seeds
  • 1/4 c shredded coconut

Strawberry, Rose, and Mint:

  • 1 c gluten-free rolled oats
  • 1 c full-fat coconut milk OR 1/2 c almond milk + 1/2 c yogurt
  • 3 Tbsp honey
  • 1/2 c strawberry-rose puree (blend 1/2 c strawberries with 2 tsp ose water)
  • 2 Tbsp chia seeds
  • 1 tsp cinnamon
  • 1 handful freshly chopped mint leaves

Method to the madness: For each recipe, combine all ingredients thoroughly and divide between two mason jars or seal-able bowls. Refrigerate overnight (the oats will soften and absorb the liquid, taking on a porridge consistency).
